Some recipes don’t need improving. They just need remembering.

Crisp on the outside, marshmallowy in the middle, piled with whipped cream and topped with sliced green kiwifruit — this is pavlova the way many of us remember it.

Our Pavlova Recipe Board features a proper old-fashioned recipe with egg whites, caster sugar, cornflour, cream of tartar, vanilla and malt vinegar, engraved in a handwritten recipe-book style onto a bamboo serving paddle.

And because we’re quite happy to put our stake in the ground:

A New Zealand Classic.
